Bruggeman Blue Yeast – Puratos

Instant drying yeast for high sugar dough, to be added directly to the flour during mixing. The amount to use depends on application, recipe, type of process and process circumstances. Also available in Blue but Bruggeman Brown yeast is more appropriate for sweet doughs containing a lot of sugar (5 to 30% or even more) (e.g.: croissants, etc.).


Bruggeman yeast blue label is a dry instant yeast that sets the quality standard, works for almost every
recipe and baking technique (doughs, puff pastries, sugar dough with up to 10% sugar).
